The explanation of なら is below. In this conversation, “2) a limitation” version was used.

You can use なら to make 1) a contrast or 2) a limitation.
1) なら introduces a sentence that says something positive about the item that is contrasted.
Q: アラスカに行ってみたいですか？
A: フロリダになら行ってみたいですが、アラスカには行ってみたくないです。アラスカは寒いですから。
Q: Do you want to go to Alaska?
A: If it’s Florida instead of Alaska, I’d love to go. Alaska is too cold.
Q: 七面鳥(Turkey)を食べたことがありますか？
A: 鶏肉(Chicken)なら食べたことがありますが、七面鳥は食べたことがありません。
Have you had turkey before?
I had chicken before, but I haven’t had turkey.

*N+なら sentences contrast between two items. The noun with なら has a positive connotation and forms a contrast with the original item. なら clauses give an idea about what you think rather than just saying yes or no.

2) When the question asks you about broad thing, you can use N+なら to talk about specific things instead of vague topics.
Q: 日本料理を作れますか？
A: うどんなら作れます。
Q: Can you cook Japanese food?
A: I can cook udon (but not all Japanese food).
Q: 外国に行ったことがありますか？
A: 中国なら行ったことがあります。
Q: Have you been abroad?
A: I have been to China (but not other countries).

より is used when you want to compare two things and prefer one of them. Also より usually goes with の方が.

EX:
私は寿司より焼き肉の方が好きです。
I like Yakiniku over Sushi.

ドイツよりイタリアの方が遠いです。
Germany is farther than Italy.

吉田さんより田中さんのほうが背が高いと思います。
I think Tanaka-san is taller than Yoshida-san.
